The Stock Merchant, Australia's first range of stocks and sauces made from ethically raised free-range animals, has announced the launch of a new product - Sustainable Crab Stock.

Made exclusively from Blue Swimmer crabs fished from the World Heritage area of Shark Bay, Western Australia, the Sustainable Crab Stock is a world first.

The Blue Swimmer crabs are sustainably harvested in Shark Bay: all undersize and female crabs are returned to the ocean, and the catch size is strictly controlled and limited to ensure that overfishing does not take place.

Following capture, the crabs are placed in ice slurry, where they fall asleep. Back at port, the crabs (which are harvested for their meat) are simmered in water. This liquor is then filtered and reduced. The result is a unique stock with a remarkable purity and depth of flavour - a pure essence of the sea.

The Sustainable Crab Stock is perfect for using in:

- Crab Bisque; Paellas; Seafood risottos; Bouillabaisse; Soups and Seafood hotpots

- Or wherever fish stock would normally be called for

As with all products produced by The Stock Merchant, the Crab Stock contains no preservatives, additives or flavour enhancers. It is pure, unadulterated and 100% Australian.
