Spotted: this unusual blend of flavours at the century-old Naschmarkt, an extensive outdoor market in Vienna on a recent trip to Austria. Gegenbauer, an Austrian company originally made its name with flavoured vinegars, but has now expanded to include a range of oils made from ingredients you would never expect, like raspberries, currants, even plum kernel and apple seed. More familiar ones are apricot kernel and pumpkin seed, a delicious nutty flavoured oil, for which Austria is creating quite a following. Then there are the seasoning oils such as the coffee one (above), as well as chilli, basil, paprika, fennel, lemon, and rosemary. It will be surprising if your mouth isn't watering now with ideas of how these could be used on salads and grills. |
