Chocolate for Lovers

An Aztec legend says a prophet brought the seeds of the cacao tree from paradise to earth. He ate the seeds and acquired wisdom and knowledge. Joan Fran Rauch in the l7th century said it was a 'violent inflamer of the passions' and Louis XV, no doubt glad to hear that description, soaked it in ambergris as an aphrodisiac.

Both Casanova and the Marquis de Sade used it for the same ends. Chocolate contains a chemical called theobromine which translates as 'food of the gods' but in actual fact can cause problems to those sensitive to it, perhaps even contributing to migraines.

Caffeine is also in chocolate (20-60mg per 200g bar) and for that reason some people substitute carob, although most chocolate lovers would say there is no comparison in flavour. Cocoa is produced from ground cacao beans and as such contains 20% fat, less than processed chocolate bars. Cocoa has excellent amounts of phosphorus and vitamin E and is also a good source of iron. While cocoa is generally used in sweet dishes, drinks and confectionery, some savoury Mexican dishes call for it to add richness and depth of flavour. It can even be used for massages!

* Diet Data: Phosphorus, vitamin E, iron, niacin, 1200kJ per 100g.

* Storage: Airtight in a cool dry place.
