There are urban recipes galore for how to bake a chicken using a can of beer or a Coke or some other drink, but until now there has never been a foolproof way for doing this. The Beer Can Chicken Rack is a novel but very tasty concept of straddling a roasting chicken over an open can of beer and then cooking it in the barbecue. Bizarre? Maybe, but it works, rdsulting in perhaps the most flavoursome chook ever, with crispy skin and delectable moist meat. The Beer Can Chicken Rack is a sturdy, four-footed cooking tool that holds an open 325ml can of beer, or any other similarly shaped open can. For anyone in charge of barbecue cooking, it also makes an ideal Christmas gift. Using it is simple. Simply take half-full 325ml can of beer, ginger beer, mixed drink or empty the can totally and half fill it with wine or stock. Add some herbs and spices (rosemary and crushed garlic is a proven winner) then place the can into the rack. Prepare the chicken (up to a 2kg bird), place it over the can and cook it in a covered charcoal or gas barbecue or oven until done. Pushing a skewer into the thickest part of the bird and ensuring the juice runs clear, not bloody, is the speedy way to determine if the chicken is ready.
