Despite its colour, rhubarb may not be your first choice for the Christmas table, but it is a fine addition. With a tart flavour and deep ruby stalk, rhubarb is a must have this week at Melbourne markets. Commonly used in pies and jams and a range of other delicious desserts including tarts and cakes and is a good source of potassium. Rhubarb also contains dietary fibre and vitamin C. But don't think of it only as an ingredient for desserts. Its complex flavour make it ideal for condiments. Serving suggestion: Make a rhubarb relish or chutney at home or add to muffins and cakes for a tasty treat. Quirky fact: It is believed that several centuries ago rhubarb was used solely for its medicinal benefits and as a treatment for various illnesses. It is only in the last few hundred years that it has been enjoyed for culinary reasons. Must know: Under no circumstances should the leaves be eaten - they are poisonous!
