Breads with benefits

Long enjoyed throughout Europe and America, more Australians than ever are now delighting in the benefits and flavours of soda bread, and according to Gerard 'Paddy' Winston the growing interest is not just taste-related.

A regular fixture sampling his Paddy The Baker range of soda breads at farmers markets around Sydney, and with an increased following nationally, Paddy says the growing interest in healthy, better-for-you food options, and a genuine desire to experience new tastes has "really put soda bread" on the map.

"Soda bread uses bi-carb of soda and buttermilk for its raising agent instead of yeast, which means it doesn't give people that bloated feeling, for starters," he said. "The buttermilk we use is super low fat. Our soda bread is also high in fibre."

Paddy The Baker's traditional Irish soda bread is 100 per cent natural, yeast and sugar free, low GI, high in fibre and low in saturated fats, making it not only delicious but healthy too. It's also a great source of energy and low GI carbohydrates which make the perfect breakfast bread and deters hunger for longer.

Dense, moist and firm, Paddy The Baker's soda bread is an excellent accompaniment to soups, casseroles and seafood dishes. "It also makes a perfect base for an open sandwich, not just for the taste but because a slice is nice and sturdy to hold!"

Fresh for up to a week, it freezes perfectly to keep on hand for longer. A loaf of soda bread goes far, as it should always be sliced thinner than normal bread (at around 1cm).

"I arrived in Australia from Ireland in late 2009 and was amazed to discover there was almost no soda bread available here. I started baking through the night and selling fresh bread at markets around Sydney the next day - the reaction I got was fantastic," says Paddy.

"With such a wonderful and diverse food culture here, and an increasing interest in healthy, better-for-you foods, I'm not surprised that Australia is now going mad for it!"

The range includes the traditional, plain Soda Bread loaf, the moreish Seriously Seedy Soda Bread (packed with five varieties of tasty seeds) and flat-cooked Soda Farls all go fantastic with seafood. Other traditional options include Potato Bread (like a potato pancake) and Paddy's Spotted Dick, a tasty alternative to raisin toast and to serve with cheeses for sweet/savoury appeal.
