Opening of Bannisters by the Sea

 

Bannisters by the Sea, a boutique hotel originally built in the 1970s with a wonderful cliff top location above the beautiful Mollymook Beach on the New South Wales South Coast, and including a Day Spa and Rick Stein Restaurant, now welcomes a new addition, Bannisters Pavilion.  

The new boutique hotel offers 33 stylish guest rooms and two luxurious penthouse suites, with a stunning backdrop of eucalyptus trees. The hotel is set back from Mitchell Parade and Beach Road, just steps away from Mollymook Beach which is famous for its natural beauty, surf breaks, and unspoilt coastline.

A highlight of Bannisters Pavilion is the expansive rooftop lined with sunbeds, umbrellas, private lounge spaces, a bar-and-grill, and spectacular suspended pool, providing the ideal coastal getaway.

The rooftop has been designed to allow guests to seamlessly move between the pool, bar-and-grill and lounge areas to take full advantage of the food and beverage options, available from noon. 

Food will be inspired by Mediterranean, Southern Californian and Mexican cuisines, complemented by seasonal cocktails, craft beers and an Antipodean-focused wine list.

Design inspiration for the trooms and public areas was drawn from the natural beauty of the area and represents accent colours from both forest and sea. Think earthy, modern, edgy-but-refined and very light, open contemporary spaces. There is also a nuance of Scandinavian design with light timber, dark charcoal and soft brass trimmings.

Bannisters Pavilion is situated just a hundred metres from the beach, so it makes sense that the design ethos focuses as much on the eucalyptus trees as its stunning aqua backdrop.
