Cherry Ripe Slice

cherries

Yum! these will disappear before you know it.

250g dark cooking chocolate

2 cups coconut

1/2 cup sugar

2 eggs

few drops of almond or rum essence

100g chopped glace cherries

Melt chocolate in a bowl of hot water or in the microwave. Line a lamington tray with foil and spread chocolate evenly over the foil. Chill till set. Meanwhile in a food processor, mix together the remaining ingredients until well combined. Spread over the set chocolate, then bake in a preheated 190C oven until just browning, about 20 minutes. Cool in the tray on a rack. Turn out, peel off foil and cut into squares or bars with a sharp knife.

Thanks Sally, good point re the flour or cornflour - guess the mix could be a bit too wet otherwise. Will give this a try sometime and post back here with the results.

Hi Mike, I have never tried this without glace cherries, but it could work with fresh ones. I like the idea. I'd be inclined to a tablespoon of flour or cornflour before processing the mix, just to soak up the extra juice that fresh ones would have. Good luck and let me know how it goes.

Hi, this recipe looks sensational but I really don't like glacé cherries (too sweet and sickly for me) so if I were to use real cherries (pitted and chopped) do you think that would work? Would you have any thoughts on whether anything would need to be changed if I did use real cherries? Guess I just need to try it but would be interested to hear your thoughts.
