Tropical mini-fruitcakes

This makes a very pretty cake that looks so Christmassy! Cut in very thin slices.

Here's what you will need:

3 cups brazil nut kernels (about 375gm)

12 pitted dates

1 cup glace tropical fruit mix, roughly chopped (or glace cherries)

3/4 cup self raising flour

pinch salt

1/2 cup castor sugar

3 eggs

1 teaspoon vanilla essence

 

Preheat oven to 150C.

Place the nuts, dates, glace fruit, flour, salt and sugar in a large bowl and mix together. Beat the eggs and vanilla together until well mixed then pour over the nuts and flour, and mix together well.

Line a loaf tin (or four or five small tins) with baking paper and spoon in the mixture. 

Scrape out all the batter with a spatula and make sure the mixture is evenly distributed. If you wish, put a few extra dates and nuts and cherries on top to decorate.

Bake loaves for 1 3/4 hours (or about 45 minutes for smaller loaves). Test with a skewer. If it can be pulled out without any cake mixture sticking to it, the cake is cooked.

Place the baked cakes, still in their tins on a rack and allow to cool. When cool, turn out and peel off paper. Serve thinly-sliced to look like a pretty stained-glass window.

Alternatively, substitute:

o   3 cups  macadamia nuts instead of brazil nuts

o   1/2 cup chopped crystalised ginger  and 1/2 cup dark chocolate chunks instead of dates

o   1 cup tropical fruit mix (including flaked coconut) instead of the glace fruit.

(optional) you may want to reduce the sugar.

Prepare as above.
