Muffulettine

Muffuletta is the Sicilian name for a traditional celebration bread loaf that is filled with many ingredients, then wrapped tightly and chilled, and cut into wedges to serve. The name of this recipe is a play on that, and I have chosen the diminutive - 'ine' - which I hope translates as 'little muffulettas'.

 

As this is an after-Christmas dish, you can use almost anything that is left lurking in the corners of your fridge, left over from Christmas lunch.

Almost any combination can be used, but the trick is to alternate slices of foods that do not stick well together (such as tomato, cheese or lettuce) with pastes such as hummus or pesto, avocado, mayonnaise and dips, so that the filling stays firm.

as many round bread rolls as you need for your family and guests

mayonnaise or olive oil

lettuce

pesto or some other spread

slices of ham (or other cured meat), cheese, shredded chicken, hardboiled egg slices

mashed avocado

tomato and cucumber slices

salad - such as coleslaw, potato salad, egg salad

sliced olives

cream-cheese filled chillies

...and anything else you want to add.

Halve each bread roll and pull out most of the soft inner crumb, reserving for another use. Brush with olive oil or spread with mayonnaise. Line the rolls, top and bottom, with a lettuce leaf then top with pesto, hummus, mayonnaise or any soft spread you like.

To the base, add a couple of slices of ham, cheese or chicken, then a layer of avocado and anything else you like*. Place the top of the roll on and press down firmly. 

Wrap tightly in plastic wrap and store in the refrigerator until needed.

*NOTE: It will probably not be possible to add all of those ingredients, above, to a bread roll, no matter how big it is. The idea is to use up leftovers in as tasty a way as possible.
