| Thai Red Curry |
 SERVES: 4 TIME: 30 mins
2 Tbsp canola oil 1 small onion, chopped 3-5 Tbsp Thai red curry paste 3/4 C red bell pepper, chopped 3/4 C yellow bell pepper, chopped 2 C vegetable or chicken stock 100g green beans, cut into 2-inch pieces 1 can chickpeas, rinsed and drained 1 C Plain 0% Chobani Greek Yogurt Salt and freshly ground pepper
PREPARATION: Heat the oil in pan. Add onion and bell peppers and sauté until soft, approximately 3 to 5 minutes. Stir in the curry paste and coat vegetables. Add the stock, green beans, and chickpeas and stir to combine. Simmer for 20 minutes. Remove the heat and stir in Chobani. Add salt and pepper to taste. (courtesy of Chobani Greek Yoghurt) |
