Honey at the Grand Wailea


Being the largest resort on Hawaii's island of Maui, Grand Wailea Resort prides itself on implementing innovative programs in an effort to support the Island's remarkable and precious environment. After reading a case study on rooftop bee farms and understanding the current global crisis affecting honeybee populations, the resort's Managing Director, Matt Bailey, gathered his Executive Chef, Eric Faivre and Landscaping Director, Jim Heid and "pollinated" a plan to be the first on Maui to have a rooftop bee colony and produce its own honey.

Heid chose the rooftop of the Haleakala Ballroom, facing toward the mountains as the ideal home for the hives. The ballroom roof is located in the least trafficked area of the 40-acre resort, has wind protection, proximity to fresh water and is in line of sight to kiawe trees that bloom with white, sweet-scented flowers.

The rooftop kiawe-white honey is incorporated in all of the resort's restaurant menus to varying degrees and also, as it has been certified by Maui’s Department of Health and carries the “Made in Maui” seal, it is now also available for guests to bring home and enjoy.

Interestingly Maui is not the only one of Grand Wailea's properties that produces honey. Last year, in celebration of September's National Honey Month, the Waldorf Astoria New York and Grand Wailea, A Waldorf Astoria Resort, on Maui, showcased each property's resident beehives through the inaugural "Battle of the Bees" coupled with a honey-infused menu exchange.  Hotel teams hope to use the event and exchange to draw awareness to the plight of the bee population while providing guests with distinctive menu options.
