Toby's Estate, Bay Street

Newest kid on the Toby's Estate block was launched on August 23, 2011 at a typically 'Toby's' event. It is quite evident that Toby Smith, the founder of this premier coffee roasting business is a down-to-earth guy who loves getting out and sourcing the best and fairest-priced coffee on the planet.

In addition to the company's five cafes, its coffee is now used in hundreds of other cafes across the country.

This latest cafe venture, housed in the former Reader's Digest building just across the street from the Broadway Westfield shopping centre, features a long zinc-topped bar, high ceiling, intentionally 'aged' mirrors and other features of the original building.

There are plans for coffee education projects here - degustations of coffees, the Cup of Excellence program - while specialty brewing techniques are already in place.

Ever humble, Toby in his speech at the cafe opening, thanked his 'great team' for their support and marvelled at the phenomenal growth of a venture that 'started in Mum's garage' in 1998.

As part of a soft launch of his book Coffee Trails, due to be released in September, he paid tribute too to the coffee growers he has met and become friends with in 11 countries all over the world, and whose passion has inspired him.

"We are the privileged ones," he stated, " to get to use and drink these coffees."

Forget being born with a silver spoon in his mouth, in Toby Smith's case it surely must have been a coffee spoon!
