When the recipe requires stones...
In some parts of China you may come across vendors who have set up their stands and charcoal braziers in a square or a market place. The cooks use a short rolling pin to roll out small pieces of dough into thin circles the size of a dinner plate. These are then draped over smoking hot stones in pans and then covered with more round hot black stones.
These wafer thin pancakes – breads? – are cooked in just seconds and keep the shape of the stones. Their dimpled surface is intriguing, almost waffle-like, and of course you just have to sample them – as the scent is irresistible. They are meltingly delicious with just a hint of the black sesame seeds or finely sliced green onion with which they have been sprinkled.
Guess what they are called? Shi tou bing meaning, stone pancakes!
