Top Canadian restaurants |
It's official. Canada has announced the names of its finest restaurants. Recently, seventy experts were selected from each province, according to its population, and each was asked to submit a list of what they considered to be the 10 best restaurants in the country.
#1. Toque! in Montreal ranked number one overall, with Head Chef Norman Laprise known for revolutionising menus throughout Canada with a focus on farm-to-table, ingredient-driven cuisine and intense collaboration between chef and producer.

Since opening in 1993, Laprise’s innovative culinary style and playful juxtapositions of flavour (such as lamb tartare with melon sorbet), along with the colourful décor and discreet service, continues to be a huge hit with critics and foodies alike.
#2. Hawksworth, Vancouver. In 2011, chef David Hawksworth crafted a new culinary style that was all his own: more multi-ethnic, more colourful, more quirky—and while still robust in flavour, far less rich. Think crispy pork belly with smoked lentil nage, grilled cabbage kimchi and black sesame. Or roast black cod in bacon-infused dashi broth. The restaurant is modern and stylish, and like the menu, has something for everyone, from the Damien Hirst “heart and butterflies” adorned leather-panelled lounge, to the chandeliered Pearl Room, the Art Room and the heritage salon. The wine list is deep, with an extensive selection of offerings by the glass.
#3. Since opening in 2009, Buca has shifted local parameters of Italian dining. Salume is now something made lovingly in house—and it’s no longer all about pork, but includes goat and lamb and sometimes even a local spin that extends to bison. The in-house prosciutto might be a culatello or even a foreleg, rather than the hind. But Buca is about much more than charcuterie. Rob Gentile’s kitchen has somehow got an offal-wary city hooked on crispy pigs’ ear with fennel salt, lamb brain saltimbocca and more. He favours big, robust flavours, it also boasts a convincing light touch. Learn more about the other 97 top restaurants......
