Meet the Food Luddite |
South Australia has much to offer, but the Barossa's reputation for world-class wine was just an added bonus for UK-born chef Mark McNamara when he decided to move there two decades ago. "When the opportunity came up for me to go to the Barossa, I saw it as the best option for me as a chef, because it had a great food culture," Mark says. "The Barossa has a more intrinsic food and wine culture than any other region in Australia. Plus, I love wine."
He started Pear Tree Cottage restaurant in Greenock in 1992, before becoming executive chef at Appellation restaurant in 2005. He has become one of several Barossa identities helping to drive the local food scene as a founding member of Barossa Food and the Barossa Farmers Market. Mark is now passing on his culinary secrets through his new venture - the Cooking School Without Walls. Class venues change with the seasons and are held in a range of unusual settings, from shiny commercial kitchens and winery out buildings to rural barns and manor house kitchens. The cooking school focuses on traditional cooking techniques and is part of Mark's Food Luddite program - a series of one-off culinary events at farms, gardens and wineries. |
