Must Eat - Must Cook |
Author, chef, radio personality Russell Blaikie admits he is a country boy at heart, brought up on a farm in the Margaret River region in the south-west of Western Australia. "My early years on the farm" he says, "gave me an education in provenance and seasonality that has been invaluable in my career as a chef. I have an understanding, respect and admiration for my suppliers and growers, all of whom are an integral part of my success as a restaurateur. This book is as much their story as it is about the recipes that use their products." His apprenticeship under Anton Mosimann at the Dorchester Hotel in London, reinforced his appreciation of the relationship between producers and chefs, and he brought all this to Must Winebar ten years ago, and has seen it become a benchmark bar in inner-city Perth, with a second restaurant now too, in his beloved Margaret River. The Perth restaurant soon became the ideal sophisticated venue and stage for Blaikie's French bistro fare. A key player in the West Australian food scene, it also won national awards such as the Gourmet Traveller Winebar Wine List of the Year award in both 2009 and 2010. The book is a visual trip into Must Winebar's kitchens with over 200 beautifully illustrated recipes that just beg to be tried. Best of all, and as you would expect, each recipe comes with wine recommendations. Interspersed throughout the book are snippets from Blaikie's key producers, providing a very real chef's homage to his partners in the business of putting the very best quality before diners.
