The Mist project |
It is easy to overlook the fact that West Papua is part of Indonesia. Chef Gavin Baker's Mist Project visited the beautiful Misool Eco Resort, Raja Ampat, Indonesia in May, 2015. Mist is a roving restaurant that reinterprets local ingredients to create innovative contemporary dishes. Chef Baker achieves this by immersing himself into new cultures and communities to access their native cuisine through the universal language of food. He researches disappearing foodstuffs and techniques, and documents the entire process. Chef Baker and a team of local cooks then join forces in the test kitchen to transform the foods into modern cuisine to offer diners a unique culinary experience. Chef Baker handcrafted a number of dinners by showcasing a 12-course tasting menu featuring unknown and forgotten local foods. This multi-sensory experience was the result of several months of on-site research and development at Misool Eco Resort.
Chef Baker’s culinary career has spanned from managing Justin Timberlake's LA restaurant on the Sunset Strip to teaching cooking in remote Himalayan villages. He has worked with the legendary Jean-Jacques Rachou in New York City, and also held a sous chef position at The Fat Duck, awarded the "Best Restaurant in the World" in 2005. In addition, he managed the concept, construction, and operation of five high-end food outlets in Melbourne, Australia. His most recent project involved filming a documentary chronicling Mist in Bali. For more information.......
